TLDR : Answer Summary
The inquiry discusses the possibility of obtaining a 5-year DTV (Education Visa) in Australia through a short cooking course. Responses clarify that a short course does not meet the requirements for a DTV, which generally necessitates enrollment in a program lasting at least 6 months. Suggestions include exploring longer cooking courses, specifically recommending Arun Thai Cooking, and potential courses related to Thai herbs and fruits. Some commenters mention recent successes with other programs while noting the importance of directly contacting relevant schools for the latest information.
Incase you are interesting to learn Lanna Northern Thai dishes and having plan to stay in Chiang Mai.
Our cooking school offer the cooking course (DTV eligible) for 1 year course and 2 years course.

I got the visa through the Sydney consulate, with discover Thai Nature seminars in January. So far they’ve enrolled over 100 people, who applied through various embassies.

Talk to the Plants and Herbs people on Whats-App. They are very responsive and will tell you where recent applicants have been successful. As for shorter courses there are currently no issues doing those and re-entering without further booked courses.
I will be going for the same in a year if it’s still about and have seen those same courses and people being granted the visa.

A short cooking course won't get you a DTV, you need to sign up for at least 6 months, preferably a bit longer. The other option you mention seems a bit hit or miss
