I’m taking an extended career break. Does putting unemployed affect approval chances? I meet the financial reqs for soft power a few dozen times over.

TLDR : Answer Summary
Being unemployed should not affect your chances of approval for a soft power visa in Thailand, as there is no minimum income requirement associated with this visa type. The discussions indicate that applying under the soft power category means employment status is not a significant factor in visa approval.

It should not be an issue with soft power. There is no minimum income requirement for the DTV.
