TLDR : Answer Summary
No proof of onward travel is required for a 30-day extension of a visa exempt entry (30 days) or a tourist visa (60 days) in Thailand. You can extend once for an additional 30 days without needing an onward flight or insurance. Although there were rumors of changes to this rule, currently, no documentation of onward travel is necessary. Extensions beyond the one additional 30-day period are generally not allowed unless you qualify for a different visa type.

Are u permitted to extend beyond the one 30 day extension?
technically no, but you may change to a different visa type or extension if you meet certain requirements. Also if they keep selling the Covid extension you possibly could apply for that.
***I heard on the grapevine less than a week ago this rule has been just changed. I don't know the source, but I remembered it because my wife and I both entered on a 1-way two years ago so it stuck out for me.
From a visa exempt entry (30 days) or tourist visa (60 days) you can get one extension for an extra 30 days. There is no requirement for an onward flight or insurance for this.
