TLDR : Answer Summary
When applying for a tourist visa to Thailand, some embassies may require a confirmed flight itinerary, while others might only require a flight number for a proposed trip. If you haven't booked a flight yet, you can use third-party services to obtain a mock itinerary for a small fee, which can be used for your visa application.

What do I upload for A confirmation letter from the employer, School, Self-assessment, Pension statement ?

A confirmed flight itinerary should suffice. You'll find websites offering the service for about $15. I used a company called travelvisaguru and had no issues

why loose $15? no one has been rejected from the UK for TR Visa , just buy the flight.

if he doesn't know his preferred dates yet then it gives him flexibility. The visa is valid for 3 months for entry

Some embassies want to see confirmed flights. Some just need a flight number of a flight you’d perhaps take. Maybe specify where you’re applying and perhaps others with experience of that one can confirm which.

I am applying from the united kingdom so I presume it would be the london embassy that deals with this

it's e-visa now so it's now done in Thailand

not quite. Evisa is still processed by your local consulate. That's why they ask you where you are and proof of residence.

i stand corrected. Thought they were being done centrally since the switch

Basically the ONLY thing that changed is that you no longer have to mail in your passport.
