Can my partner extend her visa for another 7 days after her teaching contract ends on a Sunday, and what should she do about her work permit?

My partner currently has an extension of stay based on working as a teacher. The extensions runs out on her last day of work (a Sunday), which might make it difficult to fly out that day as she finishes at 6pm. Apart from paying the 500bht overstay, is it possible to extend for another 7 days at chaeng wattana? Also before leaving Thailand, will she need to cancel her work permit?

She has to cancel the Work Permit and after that her Extension Of Stay at Immigration. If she applies directly for a new Extension and do not meet the requirements the application will not be approved and she will get 7 days to leave the country, costs of the application will still be 1.900 Thb. Immigration is closed on Sunday, so normally there is no overstay fine if you show up on monday.

I don't know if that is possible. By cancelling the work permit the booklet stays at Ministry of Labor, that means the rest of the time you work without it.
