TLDR : Answer Summary
If you entered Thailand on a U.S. passport, you received a visa-exempt entry allowing a 30-day stay, not a Visa on Arrival. You can extend your stay for an additional 30 days at a local immigration office for a fee of 1900 baht. The specific requirements may vary by immigration office, so it's advisable to check the local office's requirements before proceeding with the extension.

You'll need to change your return flight back to the States obviously if you're visa exempt was only 30 days
You can check out any time like but you cant never leave.....

If you entered using a US passport you got a visa exempt entry, not visa on arrival. Terminology excepted you can get a 30 day extension at your local immigration office.
These are the requirements for the Phuket office. Your local office may differ slightly.
You don't actually have a Visa On Arrival, what you have is a visa-exempt stamp. Yes you can extend a further 30 days at an immigration office for 1900 baht
Ham Shandy. Once only. Up until March 25, tourists can get the 60-day covid extension, but with the relaxation of restrictions worldwide this is likely now to to discontinued
