On the thai consulate website in LA, it says I have to have multiple onward tickets leaving Thailand. I thought I just needed one for the first 60 days
The METV I from Australia only required I have air plane tickets into Thailand..
You can use bus tickets. as onward travel. $20 a piece purchased form 12go (or something like it). Can be bought online. I have used bus tickets at several embassies, no issues. But it sounds like the US embassies less user friendly.
You may want to consider visa runs if they're going to be that difficult.
It's a multiple entry tourist visa so they want to see that you have a couple onward travel tickets out of thailand in 60-90 day increments. Most consulates have that requirement on the 6 month METV.
there is no official rule about what one of the 4 consulates that sell 6 month METV;s you have to use. You can use Chicago, LA, New York or Washington DC
