TLDR : Answer Summary
Yes, it is possible to switch from an Ed Visa to a retirement Visa in Thailand. You will need to cancel your current Ed extension at the immigration office and provide documentation from your school. After canceling, you can apply for a retirement extension if you meet the age and financial requirements. It's important to note that visa requirements can vary slightly by region.

Even though each amphur is slightly different this is what you need to get a yellow house book from Amphur Khlong Toey in Bangkok. I can't imagine it'd be all that much different in your Amphur.
Sorry, this being thailand, the requirements are in thai. ;)

you were told incorrectly, you can't get your name on a blue book no matter what visa you have. You can ONLY be listed in a blue book if you hold permanent residence status or have thai citizenship.
You would have your name on the title deed (chanote) of the condo but you can get that on a 30 day visa exempt or a tourist visa.
All you can get is your name in a yellow book (that's the color property book foreigners get listed in).

Yes I understand. I need to get the yellow book. Which apparently I can only do with a retirement or business visa according to the women at the desk. But I will Google this. Wasted enough of your time

One last time, unless you have been granted permanent resident status (meaning you don't need a visa anymore) or have become a naturalized thai you cannot get your name in a blue house book :/ ALL foreigners get listed in a yellow house book, and it's the yellow house book that's needed to get that 10 year i/d card for foreigners in thailand. (which costs 60 baht) ;)
, you get a pink i/d card by using the yellow house book ;)

Ok. So is there any point getting my name in It? Thought I could get a pink ID card which at the very least means no more waiting for a residency certificate when needed

The blue books conveys NO ownership rights to the place all it does is list thais (and foreigners with P/R status) as living there, it's the same as the yellow book for "normal" foreigners.
, when a foreigner (who doesn't have permanent residence status here or isn't a naturalized thai) buys a condo the blue book is blank, it has no ones name in it.

Then I guess I am changing the blue book I have to a yellow book. And since the staff ask me why I want to do it and I don't need to I suspect it requires a few hours work so it must be important

If you are on an extension of stay based on education, you can take documentation from your school, go to the immigration office and cancel the ED extension, then immediately apply for a new extension based on being over 50 and by meeting the financial requirements.
. I was told I just needed a one year Visa to get my name on my condo. I went for the Ed to ensure I improved my Thai. Told I can not use the Ed Visa to put my name on the property and now (after getting it over the retirement) that only Business or Retirement Visas qualify to name on blue book. So wondering if switching from Ed to Retirement was also possible

Nice to call the Non Immigrant O visa based on being over 50 years of age a retirement visa and than ask this question.
