Anyone know what the process is to convert from an education visa to a retirement visa in Phuket. Is this something I can do myself?

You can not change the reason from an issued visa.

You might cancel or let it run out, the current Extension of Stay based on education and apply for a new Extension of Stay based on being over 50 years of age.

But this all depend to the visa you used to enter Thailand, easiest option is to visit your local Immigration Office with your passport and ask if it is possible and what the requirements are.
