With the changes is it still for STV to get a COVID visa extension. I’ve done the COVID extension 3 times already on top of the initial 9 months I was granted. Thanks

The new Covid Extension is much stricter than the last so be prepared and have an exit plan in mind just in case
UNLESS there's a medical reason for it, you should be able to walk in and get the vaccine. I KNOW in Kanchanburi they are giving it out for free at Robinson, TMK, and Big-C without any ID required. I'm sure it's similar elsewhere too.

You would also need to factor in the time between the first and second shots

When you applied for the STV, one condition was not to get any other extension of stay in country. I would assume that you would not qualify for another 60 day extension of stay based on unable to travel due to COVID-19. Ask your local immigration office for details.
