One quick question, I am hoping to get a 30 day visa on arrival on a Swedish passport, planning to extend 30 days more once in Thailand -- upon arrival at the airport can I show a return ticket in 60 days or must it be 30 days even if I plan to extend? Thank you!

I had a 60 day tourist visa last year , with the intention of getting the extention (which I did). The airline wouldn’t let me board. No matter who I explained it too. So I bought a cheap AirAsia ticket at the boarding gate showing my departure at day 59 - it worked and I boarded
You won't get a "visa on arrival", you'll get a "visa exempt" entry which you can (for a fee) extend for another 30 days.
Thai immigration will know that you can extend. Be sure to also have your hotel booking and 20,000 baht (or equivalent) in CASH.
The issue will be with your airline accepting you for travel with a return ticket outside the 30 day window. Check with them that they're aware that extensions are commonplace.
