You will struggle on Samui ,at least I did. Try a big city , especially as you probably arrived in on first .

Not sure what you mean by not paying insurance?, Yes some banks will try to sell you insurance when opening a bank account, but my advise is go to the another bank as insurance is not requirement for opening a bank account.

Bangkok bank let's tourists open accounts, go ask them their requirements. It's basically a form certified by your embassy that your passport is genuine.
