My 30 day extension expires May 9th but I'll be in Hawaii for a week. Can I get a visa on arrival when I return?

Unless your passport is from one of these 21 countries you can not get a Visa on Arrival. Depending on passport you could be eligible for the 30 day Visa Exempt Entry (entry without Visa).
you should have no problem getting another visa-exempt 30-day entry with fly-in after a week "back home". What the authorities are targeting is repeat back-to-back border hoppers who appear to be abusing the system to stay here indefinitely.

They can ask questions if you have a history of Visa Exempt Entry and/or tourist visa. But if you have proof of funds of 20k Thb or equivalent in cash, proof of accommodation and onward travel it should be no problem.
It is called the Visa Exempt Entry and gives you 30 days of stay and you can extend that stay once at Immigration for another 30 days.

Jimmy if you come back by plane you will have your 30 days visa on arrival without any problem. Probably the airline will ask you for a back flight ticket when you will departure as they are responsable of you to leave Thailand within those 30 days.
