I had a visa on arrival and just extended for 30 days,

Can I extend one more time?

Has anyone done that?

it says with covid extension, I need a letter from Australian embassy stating why I can't go back. Is that accurate?

That’s technically the rule but immigration know they won’t issue such letter. Many offices won’t ask for it. If they do show a screenshot of their website saying they won’t. If you can’t find that email them and ask for one. When they reply saying they won’t issue one print that email.
