Can we get Thai TIN number on DTV if we stay more than 180 days and what's the process for the same ?

You can get it in any type of visa. Even a stamp on arrival tourist visa. They will ask whats the purpose of getting one.

its 180 days in a calender year starting 1st January. Its complicated and I don't know anymore about you as everyone's different. I strongly recommend professional advice

You can stay 3 x 90days which is more than 180 but

Not consecutively but perfectly legal

it's 180 days in a calender year so leaving and coming back will mean you exceed the tax number of days within the calender year!
