I am applying for a non imm OA visa. The application page asks for a flight no and hotel booking. I'm not sure yet when I want to travel. Can I leave these parts blank?

As every visa it has a valid until/entry before date. The date of the flight is needed as precaution people by a visa but can not use anymore when they finally think about going on a trip.
Some people have been able to just send a proposed flight itinerary and hotel. Like go to the airline website and search for a flight and then screenshot it. Same with hotel.
If that doesn't work then you'll need an actual flight and hotel booking.
