TLDR : Answer Summary
Yes, it is possible to extend your Covid-19 visa, specifically the 60-day Covid extension. You need to apply at your local Thai immigration office before the current extension expires on May 28. Most immigration offices are lenient in issuing this extension, but it's important to prepare the necessary documents for the application process.

as James said, when your GF visits Immigration to cancel her ED visa/extension, she can apply for the "unable to fly Covid19" extension on the spot. Most Immigrations are very lenient in issueing this 60-days Covid-extension. Input Covid19 extension into the search box, to find what documents she needs to bring in order to apply for it. She but needs to apply before the action runs out by May 28

after she gets a 60 day extension of stay based on unable to travel due to COVID-19, she *MAY* be able to get another extension of stay depending on:

1. If she has a valid reason for staying (for example, employment)

2. If the immigration office allows the extension of stay to be performed OR;

3. If the immigration office is still selling the 60 day extension of stay based on unable to travel due to COVID-19
