Hi! I’m in Chiang Mai. Can I go any day/time I want if I'm extending my 60 days tourist visa for one more month? I heard that it's difficult to change the current visa to another one (from Tourist to let's say Non-O volunteer or Ed visa etc.) Is that true? How many days should it be left on my passport if I'm extending one more month? If 5/7 days left is okay, I want to wait and see as I've applied for jobs here in Thailand as well... TIA!

TLDR : Answer Summary
In Chiang Mai, you can apply for a 30-day extension of your 60-day tourist visa until the last day of your current stamp. It is recommended to have at least 15 business days left on your tourist visa if you plan to change it to a Non-O visa for volunteering or education purposes. Many users suggest waiting until you have about 5 to 7 days remaining before applying for the extension.

You can apply for an extension (not an initial in-country visa) until the last day on the current stamp, if you mean you want to get a 30-day tourism extension first.
Then do as Tod says when you apply for a new visa.
