Is there anyway to convert an extension of stay from a Non-B to a Non-O in country at the moment? My extension of stay expires at the end of the month but I have an opportunity with a new non-profit school starting in August who will have the docs ready for my Non-O.

You don't need a Non-O anything.

All you're doing is changing the reason for your extension from one based on employment to one based on volunteering,

You cancel your current extension with paperwork from your employer and you immediately apply for a new extension with paperwork from your new employer. It's done all the time..
