Can I apply for a DTV visa from France while having a layover in Shanghai?

Hello, I have a dilemma : I'm French and I would like to apply for DTV visa, probably as freelancer (online teacher with Preply). I'm going to France for a month in June, then I will spend 4 days in Shanghai on my way back to Thailand (flying with China Eastern Airlines which stops anyway in Shanghai).

Can I still apply from France, or does that layover in China impacts the DTV ? I can't find a clear info.

Or do you recommend that I apply after, when my visa exemption runs out, from Vietnam for example ?
