Hi I'm a fully vaxxed Canadian so I'm planning on entering via Thailand Pass after Nov 1. My question is what type of visa should I get so I can stay the longest possible time? How much can I extend it? Will an education visa allow me to stay an extra year?

Special Tourist Visa (STV), gives you a total of 270 days though it is a pain to get. Lots of paperwork but maybe if you have the time and ask around for advice.

it could. It has been extended I think 5 times already, but it’s not a long term plan as they can cancel it at anytime.

It depends on your age. If you are over 50 you can apply for a “gezzer visa” or commonly referred to a as a retirement visa that would give you 90 days on arrival. If not a tourist visa would give you 60 days, but extendable for a further 30 at a local immigration office. If eligible you can come visa exempt and you’d get 30 days, which is also extendable for a further 30 days.

I'm below 50 lol. And if I wanted to stay even after I used my extension? Can I keep extending ... or switch to a different visa? Such as education visa for muay thai?

there’s not so many options for being under 50. You can opt for a volunteer visa (if you can find a organisation to do so with) or a educational visa with a Thai language school or Muay Thai.
