TLDR : Answer Summary
If you encounter issues entering Thailand with your METV visa at Suvarnabhumi Airport, consider these options: cross into Thailand by land, for example, via Laos, and ensure you have proper documentation. It is advisable to bring proof of your accommodation (like a letter of invitation), a return ticket, and a cash amount of 20,000 baht or equivalent. Issues typically arise for those with frequent in-and-out travel patterns and insufficient visa support.
Bring proof of where you stay (a letter of invitation from your girlfriend in your case) ... bring a ticket that shows you will leave within the validity of your visa ... bring 20,000 baht (or equivalent) in cash.
Those who are being refused are those who are in and out all year, who try to fool the system, and don't have the correct visa.
yes ... you're right that the rules (or lack of them) can be confusing. The other confusing thing is that what rules there are can be interpreted differently by every immigration officer! In general they're not against someone with a tourist visa coming as tourist. What they're against is someone who uses consecutive tourist visas (or visa exempt entries) to LIVE in thailand rather than to VISIT.
You could route though somewhere else like Vietnam or Malaysia.
To be honest it's probably easiest from Europe to fly to Malaysia (Penang) and cross the southern border. Maybe avoid Padang Besar. You can fly wherever you want then from Hat Yai which has good connections. Malaysian border maybe a bit higher risk than Nong Khai but refused you are just left in Malaysia and can try again.
