i am sure this guy is just a troll or scammer , any adult with some common sense could find out the information he seeks and has anyone else noticed that every reply he receives he still is not content with.
make sure you have vaccine first and some sort of proof that you had the vaccine because they won’t just let you in, I think if I remembered rightly the proof eg the doctors certificate date must only be about 2-3 days before you travel so it can show before you left Greece 3 days before you have no symptoms of the virus.
for Australian people we not need visa for 1 month but if more than one month we have to get visa for more time so I always go for 30 day holiday to Thailand 🇹🇭 then I not need visa but is maybe different for you Greek people ask your embassy or ask one of your travel agents coz them will know
You have arrange for fit to fly and covid-19 RT-PCR test yourself at a testing center. You can get a fit 2 fly certification from Dr Donna via video call. You have to upload this to your Thai embassy or consulate to obtain a certificate of entry. You will need to book alternative state quarantine ASQ hotel in Thsiland and book your flight. The requirements are at your Thai embassy website. It's not easy but possible.

yes book ASQ Hotel buy covid insurance certificate send these invoices off to your Thai Embassy once you receive your COE you can apply for your F2F certificate and your covid Test (PCR) and you take two copies of your paperwork to Airport and fingers crossed you arrive in Thailand
you can apply to your local Thai Embassy (Google Thai Embassy) and submit your flight & ASQ hotel confirmation invoice and they will email you your COE certificate
Best option is to check requirements with nearest Thai Embassy.

Return Flight Ticket, Medical Insurance, COVID Test not older than 72 hours, Fit 2 Fly certificate from physician would be my guess. Those documents you need to obtain your Certificate of Entry into Thailand. And I am sure the Thai embassy responsible for you will know and communicate that.
