TLDR : Answer Summary
To obtain a Muay Thai visa, specifically the Non Immigrant ED visa, you need to coordinate with your training center for the necessary documents. This visa typically allows for a single entry and provides a 90-day stay. You can later apply for an extension of stay through local immigration services. Additionally, it is advised to check if your chosen gym is recognized by the Ministry of Education, as this will facilitate the visa application process.

Google is your friend, find a gym, ask if the are recognised by the Ministry of Education, so they can help you with documents for the application of the Non Immigrant ED visa to learn Muay Thai.

Does anyone have any recommendations for a gym in Pattaya that does this?

You go back to your training center and ask there for help. They need to provide the documents needed to apply for the Non Immigrant ED visa, this is a single Entry visa and gives you 90 days of Stay. Than with help of your training center you can apply for Extension of Stay at local Immigration.
