Can I apply for an STV or a non-immigrant visa while in Thailand if I'm over 50?

Hi, I live in the UK and hoping to return to Thailand for an extended stay. My understanding is that I can enter the Kingdom using the tourist visa exempt for 30 days, and then potentially extend for a further 30 days before having to leave. Is there a process where I can apply for an STV or a non-immigrant visa (I'm over 50) whilst in Thailand, or can I only do this in the UK?

I would appreciate some advice or point me towards a thread that covers this topic.
