TLDR : Answer Summary
The poster is facing an issue where their Thai embassy requires a letter from the Ministry of Education for a DTV Muay Thai program, which is typically not provided by gyms as this certification is reserved for schools. Comments suggest contacting specific schools like Fever or Fairtex, and highlight the evolving requirements for Muay Thai gyms, with some embassies accepting licenses from the Sports Authority of Thailand instead.
It seems Israel are asking for the muay thai gym to be school registered at the ministry of education. So that means the gyms that do education visas can do it. Every other embassy is ok with sports authority of Thailand license, coaches board of boxing sport certification and a Ltd company registered for tax. It's changing and evolving all the time, my gym now includes 11 documents in the documents pack. Soon they will be asking for DNA of dead ancestors... as usual it's becoming a farce.

Gym’s are not accepted. It has to be a school and certified as one.

From what country are you making this request from? You cannot request DTV from within Thailand, as far as I know.
Fitfac is one, and there was another a guy used to get his dtv in Jakarta. Let me try to find the name. But sor.Dechapant is also in BKK and currently one of the better gyms
