Hi can anyone help me out with numbers 5,8,9

I don’t have accommodation booked yet and will only book one week in advanced when I do also why do they want letters from my employer and what do they want them to confirm? 

I’m in the uk British citizen applying for a 60 day tourist visa... thanks
