TLDR : Answer Summary
When moving to Thailand as a couple, it's crucial to do thorough research and not rush into long-term commitments before settling in. Consider obtaining a Thai Elite Visa if finances allow, as it offers long-term residency benefits. Be aware of local customs, adapt to the culture, and ensure you have good health insurance. Avoid risky activities like motorbike riding, and take time to explore various locations in Thailand before deciding where to settle. Also, seek advice from experienced expats to navigate the complexities of living in Thailand.

Don't make any long term commitments until you have lived there awhile and are sure that you like it and want to stay.

Avoid riding motorbikes as much as possible. They're fun, but the #1 cause of financial and physical disaster I've seen in 10 years in Asia for foreigners.

If you're not gonna be legally working hee, I'd say get a 6 month METV <-multi-entry tourist visa before you come from a thai consulate in Oz.
That'd give you almost 270 days in country, 60 days at a time.
It'd let you get settled in and explore other visa options.

In what sense? Visas, living costs etc? Really depends where you want to live, what you can afford, how long you want to be there, how old you are etc.
