Some says Taiwan is easy, got it in a day or two. Some says the opposite. Does it make a difference between soft power and workation? Feels like the latter is easier, which is the one I'm going for.

When it was in person, it was the norm to be approved in a day or 2. Now online it can take a bit longer depending on when your interview is scheduled. Although recently someone posted of getting approved within a day and her husband approved the next day as a dependent. I would agree that Workcation is easier in Taipei, which is what i got when it was in person application, The SPers have to provide similar info as workcation plus proof of softpower activity.
you say on when the interview is scheduled as if everyone is getting an interview I didn't think an interview was common in a lot of these Southeast Asian countries so it already sounds more strict?

Oh, sorry I misread your response so i deleted my initial response. In Taiwan, it is usual to have an interview, unlike some other SE countries. The interview is usually just to clarify what you have submitted and i found it the easiest part of the process. Taiwan focusses on your employment, income, business registration even for SPERs. If you want to apply for SP, other embassies are easier., Jakarta, Manilla, Vietnam.
