TLDR : Answer Summary
Expats arriving in Thailand with Visa-Exemption are advised to consider various insurance options. Popular recommendations include AXA, which is noted for its quick service, providing certificates almost instantly, and Luma, offering a seamless online application process. SafetyWing is also mentioned for its monthly contracts that can be tailored for travel coverage, including the necessity to demonstrate coverage duration. Pacific Cross and other insurance providers like RGG have been suggested as well, indicating a mix of experiences and preferences among users.

Had my CoE pre-approved today and I am using SafetyWing. As it is normally a rolling monthly contract you need to ask them (via free online chat) to set an end date for the purposes of showing you're covered for the trip duration. Took them about 1 day to sort. Then you can download this document showing everything you need.
