We want to enter Thailand on 12/12 and then travel to Laos on 17-19 and then re-enter Thailand on 20/1 for another 34 days we have British passports. Should we do visa exempt for the first few days in Thailand and get a 60 day visa for the second entry?

TLDR : Answer Summary
The advice suggests entering Thailand visa exempt for the initial stay and opting to re-enter under visa exemption again after your trip to Laos, with the possibility of a 30-day extension to accommodate your 34-day stay.
You would need to get the tourist visa while you're in Laos and since you'll only be there for 2 days it's not enough time. Just enter visa exempt again when you return from Laos and get the 30 day extension on your visa exempt entry. That will cover your 34 days.
