TLDR : Answer Summary
A Statutory Declaration (Stat Dec) from the Australian Embassy confirming income and financial status is accepted by Thai immigration for applying for a one-year Extension of Stay, but not for renewing a NON-OA Visa. It's advised to ensure the declared income can be substantiated with documentation, even though immigration rarely requests proof.

Yep a stat dec or affidavit of income from abroad notary from your country's consulate here IS most definitely accepted by the immigration office for proof of funds. (y)
I caution everyone NOT to put down an amount on a stat dec that you can't back up with documentation (even though immigration's rarely asks for proof they CAN ask if they want to).

You can not renew your Non Imm O-A visa. You can apply for a 1 year Extension of Stay at Immigration. You can use the letter from your Embassy that you have an income of minimum 65.000 Thb a month.

I do not think Immigration Office let you come and go 14 times for nothing as a set up. I guess something went wrong in the discussion about needed documents by translating.

David Broadfoot wow, I had no idea, I wonder why down there you don't need any proof when you show up at the consulate to get a stat dec but up there you do?
AFAIK only the auzzie consulate in Chiang Mai was asking for proof of what you put on the stat dec when you get the document notarized. Bangkok wasn't doing it at all and you can still just show up, fill it out and put what ever you want on it
A stat dec alone is not enough...you have to provide proof what you say in stat dec is true eg letter from accountant

There is no checklist available for every office in Thailand. Some differ in requirements. Best is to make a quick visit and ask for the hand out, this hand out is in English and Thai.
