visa exemption is 30 day (currently). Almost all immigration offices will allow you to apply within 30 days of your current stamp. That means you could essentially fly into Thailand and immediately go to the local immigration office and apply for your extension

They add on the days, so there is no downside to applying early.

Pretty much all offices will let you apply when you have 30 days or less left on your stamp. Some larger ones like Bangkok, Phuket, Chiang Mai, will let you apply when you have 45 days left.
