TLDR : Answer Summary
You can apply for a 30-day visa extension at the Immigration Office in Koh Samui starting today, as long as your current Admitted to Stay stamp expires on January 1st.

And that all depends on where you stay, but seeing that hopefully your Admitted to Stay stamp expires 1 Jan and not your visa, you can go every day from today.
