TLDR : Answer Summary
An Australian passport holder can enter Thailand twice a year without a visa by crossing a land border, with unlimited entries allowed by air. However, living in Thailand on consecutive visa-exempt or tourist visa entries may lead to questioning or denial of entry.

You can get TWO 30 day visa exempt entries per year by a land border, unlimited entries by air.

BUT what you're not gonna do is live here on back to back visa exempt or tourist visa entries. At some point you're gonna get pulled aside, questioned, and/or denied entry to the country.

What is a holiday visa, as far as I know it does not exist in Thailand.

If you mean how many times can I enter without buying a visa at a Thai Consulate, it is two times a calendar year using a land border and un limited by air.
