For Americans who enter without a visa and just get the immigration stamp. How many 30 day periods can you extend under this method? And can I extend at Chamchuri Square or do I need to go all the way out to Chaeng Wattana?

TLDR : Answer Summary
Americans entering Thailand without a visa can extend their initial 30-day Visa Exempt Entry once for an additional 30 days. Extensions can be done at IT Square Laksi Plaza, located near Lak Si station, rather than the main immigration office at Chaeng Wattana.

There is no official limit on entries by air. Extend each time.

The 30 Day Visa Exempt Entry can be extended ONCE with another 30 day based on tourism. You can do this on the 3rd floor of IT square Laksi Plaza Cheangwattana road in Bangkok.
