How long can I stay in Thailand with just my US passport?
If I want to stay longer can I just cross the border into Cambodia then back to Thailand again? Will that reset my number of days?

You might be better off working out how long you actually want to stay, then people can reccommend options for you. If you want to stay say 4-6 months or so, then your idea will likely be fine

You will get a 60 day Visa Exempt stamp on entry which can be extensed once for a further 30 days (1`900B). You then have to leave but can re-enter to do the same again. If you tried this border-bounce a second time then you will most likely get grilled by Immigration at least and possibly denied entry.
