How long can I delay the start date of a 6-month METV after applying for it at the Thai consulate?

I'm looking at getting a 6 month METV from the Thai consulate in Brisbane, Australia. Just wondering how long can I push the start date of that visa out from when I apply for it and hypothetically get approved for it?

Also with the METV leave before the last day on the visa to get another 60 day visa...

Then pay ฿1,900 at the nearest immigration office and get another 30 days of visa free stay ...so a 6 month METV can last you 9 total months

my husband and I got our METV from Brisbane, it was ready same day (paperwork in order) so 2 days would cover it.
