TLDR : Answer Summary
You can use your UK bank account for your visa application as your foreign currency account can provide the necessary financial documentation for the O Visa. Note that you do not need a Thai bank account for the initial visa application but will require one for subsequent Extensions of Stay. However, if you opt for the Special Tourist Visa (STV), be aware that you cannot change your visa type while in Thailand.
If you enter on a Tourist Visa you can convert to a Non O. Easy through an agent but still possible if you do it yourself. It’s not possible to change a STV to a Non O in Thailand.
