Hey guys!! New to the group and seeking some advice...
I’m an American who’s been living here for the last year under a Non-ImmB visa and work permit (I’m a teacher). The learning center that was handling my paperwork has decided to give the responsibility to my school. My visa expires March 14 and my school is beginning to process my papers to cancel my work permit and start the process over again.
Is it necessary for me to do all this? Go through getting background checked, going to Laos (can I go to Hanoi instead?!), and doing the whole shebang.

TLDR : Answer Summary
An American teacher in Thailand is facing a visa renewal issue after their school is taking over the responsibility for their work permit. The individual wants to know if they need to undergo the complete visa and work permit process again, including background checks and traveling to another country for paperwork.
Also, does anyone know if it’s possible for me to hang out in a country for a couple days after getting my visa issued? Or do I need to go straight back to thailand?
You can stay until the date in your current stamp 'admitted until date' since you are not on extension yet. Make sure the date is on your entry stamp, not on your visa.
