So I received my O-A visa few weeks ago. If I were to enter (first time with this visa) sometime in December, would immigration officer at the airport ask me for evidence of insurance ? or is this still a gray unknown area.

TLDR : Answer Summary
When entering Thailand with an O-A visa, it is confirmed that you will need to present valid health insurance that meets the specified requirements upon arrival. The allowed stay on your visa will correspond with the duration of your insurance, up to a maximum of one year. This requirement is clearly outlined in the Immigration rules.

And as the rules of Immigration are clearly written and grey unknown areas only exist due to foreigners who refuse to read the complete text or read between lines to make up their own stories, I close the commenting here. To discuss, comment, ask anything about this new requirement for the Non Immigrant O-A visa, feel free to use this topic, special designed for it

According the the rules announced by Immigration, yes you need to have a valid health insurance which meet the requirements and you get an allowed stay till the end date of that insurance with a maximum of 1 year.
