I've found that when you get an extension of stay and the immigration officer tells you to copy every page in your passport it's because:
A ) you can't understand sh*t for thai and they have no way to tell you to copy ONLY the pages with thai extensions or entry stamps on it,
OR
B ) they can't speak sh*t for english and they have no way to tell you to copy ONLY the pages with thai extensions or entry stamps on it,
Those are the only two reasons I can think of that they tell you to cooy every page.
