TLDR : Answer Summary
For a standard 30-day extension on a 30-day visa exempt entry in Thailand, an embassy letter is not required. You only need to provide your passport, a copy of the passport's front page, a copy of the stamp/visa page, a copy of the TM6 form, a filled TM7 form, two photos, and a fee of 1,900 Thai baht.

Good luck.

Go to your local immigration office one or two days before your current permission to stay ending date.

They are so busy now..
