During the application process, I assume not everyone already has a condo lined up before moving out there. Do you just put the hotel that you’ll be staying at for the first couple weeks or whatever as your living situation? Will that suffice?

TLDR : Answer Summary
When applying for a visa to Thailand, it's acceptable to list your temporary accommodation, such as a hotel, as your living situation. Many expats have reported that they successfully used the address of their initial place of stay, whether it's a hotel or a hostel, without any issues. There are no restrictions on changing your living situation later, so you can start your visa application with your first accommodation, even if you plan to move shortly after.
You don't have to live 5 years in one place. You're allowed to change your place of living without any restrictions. However, I'd recommend you to stay at the first hotel for at least a few weeks, maybe more.
