Hello, I was due to do a border run to Myanmar from Kanchanaburi but obviously that's closed. My extension stamp ends today. Am I able to get a 2nd extension on the 30 day stamp from my last border run? Thanks.

Maybe. What is your nationality? If you are from Italy, Korea, or China, you can get a letter from your embassy saying you can not leave, and the Thai government will grant you another 30 days. YOU CAN NOT BE ON OVERSTAY though, so if you're from those three countries, get the letter.
If you are not from those countries, TRY to follow Roberts advice. If the immigration office refuse to sell you a 7 day extension of stay rejection stamp, figure out some way to leave by 11:59PM today.
No, you may try to apply for an new Extension of Stay and get that not approved and 7 days to leave the country. But it is the decision of the Immigration officer to give or not.
