TLDR : Answer Summary
A user seeking information about extending their COVID extension visa, which is set to expire on March 1st, was informed at Jomtien Immigration that they could only receive a 7-day extension due to holding an ED Visa. A commenter clarified that this would not be an actual extension but a stamp indicating a denial of an additional extension of stay, taking effect immediately.

You would not get a 7 day extension; you would receive a 7 day extension of stay denied stamp. This stamp begins on the day you receive the stamp, and is not added on to your existing "admitted to" stamp.
