I entered Thailand on a visa waiver in January that I extended. I want to stay longer and was wondering if it was possible to do just a border run and get another waiver or if I have to stay out of the country for a night or more ?

apparently you cannot extend a visa weaver entering by land and since I might stay a bit over a month it will be easier.
nope, but depending on where you're bouncing to be prepared to have proof of funds (20K baht in cash) just in case you're asked for it

Since Dec 31st 2016 they went back to 30 day visa exempt entries by land but put a limit of TWO per year.

you can do a border-bounce (go to a border, stamp out of thailand, stamp in&out of another country and stamp right back into thailand to get a 30 day visa exempt entry stamp
Be advised that you can get only TWO 30 day visa exempt entry stamps by land borders in a year.
