Can I delay starting my 60-day tourist visa in Thailand during my trip?

I will be in Phuket for a weekend to meet friends, go with them to Singapore, and then we end our trip in Bangkok. I don't want to start the 60 day tourist visa until I return to Bangkok. Will this be possible?

You can ask at passport control and if they don't do it you could buy a re-entry permit before you fly back out which would keep your 60 day stamp valid so you could come back and be stamped in until it's expiration date

I'd say NO, if you have a 60 day tourist visa in your passport the immigration office is going to stamp you in on it when you arrive in thailand.
