That's why I (also a German citizen) started my 90-days Non-Imm-O Retirement Visa by entering Thailand on this visa on October 5th. So the date of expiry was January 4th. I applied for the 1-year extension around Christmas the same year. Since 17 years, my renewed 1-year Extensions of Stay Permit based on retirement will start on a Jamuary 4th. If you had planned your stay better, you could profit from it. However you planned your application in such a timeline that would lead into a beginning of every Extension on a May 7th, every year. There is no way out of it except you invalidate your stay permit and start the process of obtaining the 90-days Non-Imm-O Retirement visa, again. Enter Thailand by the first week of November on a NEW 90-days Non-Imm-O visa, and your 1-year extensions will start on a date in February every other year
The only way that it could be done is if your passport expires in February and you applied for an extension where the passport is not valid for the entire subsequent year. The extension granted would only last until the passport expiration date.
Otherwise your extensions will always be on the same date every year unless you started over from scratch.
