Quick question, I am on a multiple entry OA visa, currently in Thailand. An opportunity has come up but will require me to make a company to purchase it. Can I still effectively be a non working "director, share holder" whilst on this visa?

yes for shareholder. yes for being a MD but only if you are outside of thailand and then sign from there. not to be MD in thailand and give signatures ( you could appoint a thai MD who will sign for you and who you trust. tricky thing.) be aware that certain signatures with government, revenue, dbd are only allowed when you reside inside thailand.
